Allergen Awareness for Brewing and Alcoholic Beverage Production e-learning is designed for those working in the drinks industry, particularly brewers and other alcoholic beverage producers wishing to learn about food allergens in the context of this sector. The course provides an awareness of food allergy (including the health implications for a person with a food allergy) and the 14 recognised food allergens in UK and EU legislation. It then focuses in detail on the common food allergens associated with brewing and alcoholic beverage production such as cereals containing gluten, sulphites, milk, lactose (milk) and egg. Details on how to manage food allergens within a beverage production facility are outlined, including how to create, document, and implement a full allergen management system. Examples are provided in the context of drinks producers along with an allergen management system template pack, including risk assessments, which a business can apply to their own site. The final section of the course provides details on allergen information required when selling alcoholic drinks products at the point of production, wholesale, online sales, retail and catering establishments (bar/restaurants). Examples of how to apply this information are provided including that required for drinks labels. On successful completion of the course you will be awarded a certificate which can be used to demonstrate training compliance and continual professional development (CPD).

The course is delivered through a digital platform, hosted by LMS provider Digital Chalk. The course includes presentational reading material as well as voice over narration and interactive slides. Each course section ends with a serious of interactive quiz type questions which are designed to ensure the learner has captured the invaluable information included within the section. On successful completion of the course the learner will be able to download a CPD certificate with their name and date of course completion. A copy of the certificate will also be emailed out instantly to the delegate.

The course is suitable for employees at all levels within a brewery or similar drinks producer who are looking to gain knowledge food allergens and how to manage, control and apply correct labelling information when selling drinks products. Module 1: Introduction (Adverse Reaction to Foods and Foods Causing Reactions)

1. Adverse Reaction to Food
Outline of what is an adverse reaction to food and presentation of information on the different types of adverse reactions e.g. food allergy, food intolerance and coeliac disease. Symptoms associated with adverse reactions to foods, including anaphylaxis.

2. Food Allergens
Detailed overview of the 14 recognised food allergens in Europe including information on prevalence and severity of allergy to these foods. Information on nomenclature and derivatives of these foods.

Module 2: Food Allergens Associated with Brewing and Other Alcoholic Beverage Production

1. Gluten
Overview of gluten and the common cereals containing gluten. Information on gluten free beer, gluten testing and labeling requirements.

2. Food Allergens Associated with Alcoholic Beverage Production
Overview of specific food allergens associated with alcoholic beverage production: Lactose (Milk), Sulphites, Milk, Egg, Fish, and Molluscs.

3. Spirit Drinks and Liqueurs
Outline of spirit drinks production process in terms of removal of allergenic properties. Allergens associated with post distillation such as those in the production of liqueur drinks.

An outline of the main routes for an allergenic incident to occur in drinks production.

2. Managing Allergen Risk – Control Measures
An overview of good manufacturing practices that should be applied in a drinks manufacturing site to manage the risk of an allergen incident occurring.

3. Documenting and Allergen Management Plan
Overview of how to document an allergen management plan including the application and documentation of an allergen risk assessment.
